It can be bought seasonally then frozen to be enjoyed all year round. Indeed many chefs are increasingly cooking up some fantastic dishes using the wonderful variety of British game to capitalize on the very distinctive flavours." Each game species has a season and can be enjoyed all year round. September is the start of the partridge and duck season, closely followed by pheasants in October that go right through to the end of January. Venison is available throughout most of the year. Then from January to August, woodpigeons are available. "There are a lot of fantastic game recipes, both traditional and modern to make the most of your culinary skills," says Deborah. "Why not serve it with local seasonal vegetables to create a real taste of the British countryside for all the family to enjoy."
