Mixed Diced Game is a fantastic, versatile base for making anything from a hearty cold picnic pie, a hot Game pie, to a delicious warming Game casserole. A typical mix of Diced Game consists of Venison, Pheasant, Pigeon and Mallard.  

  • Ingredients

    • Venison, Pheasant, Pigeon and / or Mallard
  • Cooking Methods

    • Mixed Diced Game should be treated like any other red meat used in a casserole. Cooking slowly on a low heat will bring out the full flavour of the Game.
    • To Casserole Preheat oven to 150c Coat the Mixed Diced Game in well seasoned flour.
    • In a heavy frying pan sear the meat until it is light brown all over and place on a plate. Using the juices in the pan fry some onion celery and carrot until soft.
    • Add the onion and Mixed Diced Game to a casserole dish. Add your stock, some wine and any other vegetables required and cover. Place in the center of the oven for 2 - 2 1/2 hours.
    • To roast your Oven Ready Pheasant: Preheat oven 220C , 200C Fan , Gas Mark 7 Oil and season Oven Ready Pheasant and Cover with streaky bacon.
