Pigeon is a delicious, cheap and easy source of protein, high in iron, low in fat; it has a distinctive woodland flavour which is enhanced by the diversity of the Pigeons’ rich diet of wild berries and grains. A whole oven-ready Pigeon will feed one person and is quick and easy to cook. The rich flavour is complemented by other strong flavours such as dried fruits, gin, port and red wine.

Cooking Methods
- Pigeon is quick and easy to cook. It makes a fantastic Sunday roast made all the more special by everyone having their own bird. Pigeon should be served slightly pink and allowed to rest for at least 5 minutes before eating.
- To roast an Oven Ready Pigeon: Preheat oven to 180c / Gas mark 4 Heat a heavy frying pan and sear the pigeon either side until golden brown
- This will seal the meat and help to stop it drying out. Place the Pigeon in a roasting dish and put into the preheated oven. Roast the Pigeon for 8 - 10 minutes for slightly pink and a further 2 - 4 minutes for well done.
- Keep basting the bird during the cooking time. The juices should run clear when the bird is cooked. It is important not to over cook the Pigeon otherwise it will become tough.
- Remove from the oven and leave to rest for 5 minutes. Use the juices to make a deep rich gravy or fruit sauce such as Blueberry or Blackberry.
- To roast your Oven Ready Pheasant: Preheat oven 220C , 200C Fan , Gas Mark 7 Oil and season Oven Ready Pheasant and Cover with streaky bacon.
