Wild Boar Bolognese

Wild Boar Bolognese


Serves 4

 1 tbsp extra virgin olive oil

1 onion, chopped

1 clove garlic, crushed

4 fresh sage leaves chopped

1 sprig fresh thyme

3 tbsp tomato purée

500g Willo minced wild boar

250 ml red wine

1 tin chopped tomatoes

100 ml chicken stock

Black pepper

 Method – Wild Boar Bolognese

  1. Heat the oil in a large pan. Add the onion and garlic fry until soft.
  2. Add the Wild Boar mince and cook until brown over a medium heat.
  3. Add the sage, thyme and tomato puree and cook for a further 2 minutes.
  4. Add the red wine, chopped tomatoes and chicken stock.
  5. Bring the pan to a simmer and stir. Leave on a low heat simmering for approximately 30 minutes until the sauce is thick and deep in colour.
  6. Serve your Wild Boar Bolognese over spaghetti with grated cheese.
