Pot Roast Partridge with Chorizo
4 Oven ready Partridge
1 tblsp Rapeseed oil
1 knob of Butter
200g Chorizo sliced
50g Carrots chopped
1 large Onion chopped
1 clove of Garlic crushed
1 x 400g tin Chopped Tomatoes
600ml Game or Chicken Stock
1 Bay leaf
Salt and Pepper to season
Preheat oven to 180c , 350F, Gas Mark 4
Heat oil and butter in a frying pan over a moderate heat.
Put Partridge in the pan and seal for 30 seconds each side.
Remove from heat and put on a plate.
In fraying pan fry onions, carrots, chorizo, garlic and saute for a couple of minutes.
Remove from heat and add chickpeas, tomatoes, bay leaf and stock and the Partridge. Season to taste.
Put the lid on and cook for approximately 30minutes.
Remove from oven and allow to rest.
Serve your Pot Roast Partridge and Chorizo with savory rice.
