Grouse is one of the most eagerly anticipated Game birds. The start of the Season 12th August is commonly know as The Glorious Twelfth. Grouse is one of the richest and most flavoursome of the Game birds. It has a deep, dark yet delicate flavour. The Grouse naturally lives on only a small number of specific moors. The heather rich diet subtly scents the meat adding to the unique flavour of the Grouse. Grouse is a healthy meat, lean, low in cholesterol and high in protein. This exceptional bird makes a fantastic meal for any special occasion.

Grouse is a very lean  bird and only requires a short cooking time, dressing the bird with streaky bacon is a great way of preventing it from drying out in the oven. The grouse has its own rich flavour that does not require other strong flavours adding to make it taste amazing. Mushrooms, shallots and a little thyme added to the roasting pan will be enough to make a wonderful gravy after cooking. Grouse can be cooked and served in many ways from a warm Grouse salad, Grouse Penne, or Soup but many people prefer to have roasted Grouse. If you have an older Grouse a Pot Roast would be very tasty.

To Roast your Grouse:

Preheat oven to 190C / Gas mark 5

Sear the grouse over a high heat in a frying pan until slightly browned either side.

Dress with streaky bacon and season

Place Grouse in roasting tray with any other chosen vegetable and roast for 8 - 10 minutes basting half way through. You will know your Grouse is cooked if it is springy to touch with a little resistance. the juices must run clear.

If you have an older Grouse it will require a little extra cooking time , roast for a bout 10 - 15 minutes.

Serve with a rich gravy, bread sauce and seasonal vegetables, delicious!
