Venison Loin Medallions make a delectable meal. These tender pieces of loin have been cut into portions and are excellent as a starter for four or a main course for two. The Venison is rich in flavour, low in fat, high in iron and totally exquisite.  Dark fruits and berries such as Blackberries or Juniper make a fantastic sauce to go over the Medallions the fruit compliments the rich deep flavour of the Venison.

Venison Loin Medallions are quick and simple to cook, they should be treated like beef and served pink.


To Pan Fry:

Heat a heavy frying pan over a high heat.

Add some Rapeseed oil.

Season the Venison Medallions with Sea Salt and Black Pepper .

Place the Medallions into the pan and cook for 2 minutes either side. You can add some sprigs of fresh Thyme or Rosemary to the pan while cooking to enhance the flavour. ( Increase the cooking time by a minute either side for a well done Medallion)

Leave the Medallions to rest for at least 5 minutes cover to keep warm.

Use the juices to help make a scrumptious sauce.
